Nigiri (literally “hand-pressed”) is sushi in its most direct form. The rice is seasoned with vinegar, salt and a touch of sugar, shaped by hand, and topped with a single slice of fish. Nothing else competes with it, so the balance between warm rice and cool salmon is the whole dish.
Salmon is the most approachable nigiri on any Japanese menu — rich, buttery and gently sweet, with none of the sharpness that puts newcomers off.
